Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 green bell pepper, diced
- 1 can diced tomatoes
- 1 tablespoon tomato paste
- 6 cups chicken or vegetable broth
- 200 g small pasta
- 1 cup cooked white beans
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon paprika
- ½ teaspoon black pepper
- Salt to taste
- 2 cups fresh spinach or chopped parsley
- 40 g grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, celery, and green bell pepper. Cook for 5–7 minutes.
- Add the garlic and tomato paste, then cook for 1 minute.
- Add the diced tomatoes, broth, oregano, basil, paprika, and black pepper. Bring to a boil.
- Reduce the heat and simmer for 15 minutes.
- Add the pasta and white beans. Cook for 8–10 minutes, until the pasta is tender.
- Stir in the spinach during the last 2 minutes of cooking.
- Season with salt to taste.
- Serve hot, topped with Parmesan cheese and fresh parsley.
Tip: For a thicker and richer soup, mash a small portion of the beans and vegetables before serving.
